This Mushroom and Thyme Cheesy Toast is a tasty combination of mozzarella cheese topped with mushrooms and thyme on toast, then, browned under the broiler. Super easy and so versatile, it is great for any meal of the day.

Breakfast

For breakfast I usually top the Mushroom and Thyme Cheesy Toast with a fried egg and serve it with a side; such as homefries, fresh fruit, or creamy southern grits.

This morning we chose fresh fruit. We have too much to do today and didn’t want to get weighted down with too many carbs.

Brunch

My husband, Hugger, and I love this dish for a lazy weekend brunch served with mimosas, of course. We like it topped with a poached egg and a creamy beurre blanc sauce.

 This is a simple and impressive dish to make when you have weekend guests. I bet they ask for the recipe.

 Lunch

This scrumptious cheesy toast is great for lunch. It pairs well with a cup homemade cream based soup. I usually match it with creamy tomato basil or she crab soup.

 The mushroom and cheese mixture is also delicious used in a gourmet grilled cheese sandwich. Your choice; whatever floats your boat.

Appetizer

Mushroom and Thyme Cheesy Toast is also an awesome and easy appetizer. Just cut the toast in halves or thirds, or make it bruschetta style and drizzled with a balsamic reduction or glaze. Great served with your favorite wine.

When I was growing up, one of my mom’s “go to” appetizers was a mixture of cheese and mayo on bread heated under the broiler until browned and crispy. Three ingredients most of us always have on hand. This is just a fancier version of a great oldie.

Dinner

For Dinner, you can add a side of sautéed spinach or a caprese salad. Use your imagination for a meatless dinner. But, of course, you can also serve it with your favorite steak.

Mushroom and Thyme Cheesy Toast has endless possibilities! I love it! So does Hugger! 

If you know me or have read a few of my other recipes, you know I love super easy and versatile! For that reason, I use the pre-shredded and grated cheeses, dried herbs, and pre-minced garlic; but you can certainly shred and grate your own cheese, use fresh herbs, and mince your own garlic. To be honest, the recipe is so good as is, it’s not worth my time and effort. But feel free to do it your way.

Other Versions

Guess what? Remember I said Mushroom and Thyme Cheesy Toast is so versatile? Well, you can use a cheese other than mozzarella. Gruyere, Swiss, Ricotta and cream cheese are great substitutes. If you use Ricotta or cream cheese, I would omit the mayonnaise.

Bread

I usually make this recipe with good quality sliced Italian bread from the grocery store bakery, but a great crusty French bread works well also.

Herbs

You can also experiment with different herbs. My husband and I love the mushroom and thyme combination and use it in so many dishes, but other herbs work great, as well. Basil, oregano, or an Italian season blend are great choices; the sky’s the limit.

Tasty Additions

A splash of sherry or Marsala wine is a great option added to the mushrooms (just make sure the alcohol cooks off). And, as I mentioned earlier, a balsamic reduction or glaze is a great addition.

Mushroom and Thyme

Cheesy Toast

A tasty combination of cheeses topped with mushrooms and thyme on crusty toast. Super easy and so versatile, it is great for any meal of the day.

Ingredients

  • 8 slices of good quality Italian sandwich bread from the grocery store bakery
  • 2 Tbsp Butter
  • 8 ounces of mushrooms, sliced thin
  • 1 tsp Thyme
  • 2 tsp of Garlic, minced
  • 2 cups Mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ¾ cup mayonnaise, good quality
  • 4 Tbsp of a good quality mustard, optional
  • Salt and pepper, to taste

Let's Get Started…

  • Very lightly toast the bread slices in the toaster; just enough to crisp, but not brown. Put on a sheet pan.
  • Spread the mustard lightly on one side of each slice of toast, optional.
  • Turn the oven on to broil.
  • Add the butter to a skillet on medium heat. When the butter is melted, add the mushrooms and coat well with the butter. Cook for about 8-10 minutes until the mushrooms are wilted and lightly browned.
  • Add the thyme and salt and pepper, to taste. Take the skillet off the heat.
  • In a quart size bowl, mix the mozzarella, parmesan, and mayonnaise. Add salt and pepper, to taste.
  • Spread the cheese mixture on each slice of toast.
  • Top with the mushrooms.
  • Place the cheesy bread under the broiler for a few minutes until bubbly and toasty brown. Keep a constant eye on it so it doesn’t burn.
