Corn Salad

Quick, no-cook, and colorful! This Easy Peasy Summer Marinated Corn Salad is packed with a burst of flavor. The perfect side for your summer BBQ menu. I love this dish!!!

Ingredients

  • 4 cups Fresh Corn off the cob or frozen, thawed
  • ½ cup Red Onion, diced
  • 1 cup Cherry Tomatoes, halved
  • ½ cup Bell Pepper, diced (red, green, or both)
  • Juice of 1 Lime
  • 1 cup Sugar
  • 1 cup White Vinegar
  • 1 cup Frozen Baby Peas (optional)

Let's Get Started

  • In a large bowl, add Corn, Red Onion, Tomatoes, and Bell Pepper and gently mix.
  • Add Lime Juice, Sugar, and White Vinegar.
  • Cover and refrigerate for a couple hours, overnight, or at least until the sugar is dissolved.
  • If you plan to add the peas, do so about 30 minutes prior to serving. Otherwise, they will lose their vibriant color.

This is definitely one of my “go to” dishes for summertime pot luck dinners and BBQs!

Quart size mason jars are great for storing this yummy salad until needed, and take little space in the refrigerator. The mason jars are also a great vessel if you want to share with family and friends.
