Easy Mini Southern Tomato Pie Appetizer

Southern Summer Classic
Tomato Pie is a yummy Southern staple layered with juicy thick slices of vine-ripened tomatoes available in abundance every summer in the Carolinas. This classic dish consists of 4 basic ingredients – tomatoes, cheddar cheese, mayonnaise (Duke’s, of course), and a pie crust. Through the years, it has evolved to include different herbs, heirloom tomatoes, and other gourmet cheeses. The original recipe is so versatile; it can be jazzed up in many ways.
Where Does This Wonderful Recipe Come From?
“Damon Lee Fowler, author of nine cookbooks, including Classic Southern Cooking, believes it became widely popular in the 1970s. Fowler offered the theory that mayonnaise manufacturers might have come up with the original recipe and included it in promotional materials for the home cook, causing this tasty idea to soon spread across the South.” – Sandra A Gutierrez, SouthernLiving
Every summer I make the “real deal” with the best tomatoes from the local Farmer’s market. But, because I love this dish so much, I choose to make and serve another version year round as mini pie appetizers and use canned tomatoes, instead of fresh.
Modifying the Recipe for Mini Tomato Pies
Use the Rotel Original tomatoes with the green chilies. The chilies give this dish a kick. Add cooked bacon. To make it easy, buy the pre-cooked bacon found next to the salad dressings and croutons. Instead of cheddar cheese, add Swiss cheese. The Swiss nicely compliments all the other ingredients. And, to make it easy peasy, switch out the pie crust for frozen phyllo tart shells.

Tomato Pie
A modified version of a summer Southern classic that can be served year round as a delicious appetizer.
Ingredients
Mini Tomato Tarts
- 1 (10oz) can Ro-Tel Tomatoes, drained
- 1 cup Mayonnaise
- 1 (2.8oz) pkg Bacon Bits
- 1 cup shredded Swiss Cheese
- 3 pkg frozen Phyllo Shells
Let's Get Started…
Preheat oven to 350°
Preheat oven to 350°. Combine drained tomatoes, mayo, bacon bits, and cheese. Fill shells and bake for 10-15 minutes.

Hello Allison. These sound and look great. I'm a huge tomato fan and live near Charlotte, NC so tomatoes are a staple here. Due to having to eat a heart healthy and type 2 diabetes diet, I will have to tweak a little, but will definitely be giving these a try. Thanks for posting.
I hope you do try it. You can try a cauliflower, cheese, or egg base instead of the crust. It certainly would change the the recipe slightly, but would be delicious also.
