Spicy Tuna Sushi Stack

Spicy Tuna
Sushi Stack
Sushi made simple! Fun to make, exploding with flavor, and guaranteed to impress! Great for lunch or dinner.
Ingredients
- 1/2 cup Jasmine Rice (I use the vacuum packed rice found in grocery store), cooked
- 1 Tbsp Rice Vinegar
- 1/2 Cucumber (I use the artisan), cubed
- 1/2 Avocado, thinly sliced
- 1/2 Carrot, finely grated
- 1 5oz can Albacore Tuna, in water
- 1/2 cup Mayonnaise
- 1 1/2 tsp Sriracha Sauce
- 1 tsp Sugar
- White & Black Sesame Seeds
Let's Get Started
- Mix together mayo, sriracha, and sugar. Set aside.
- Prepare rice, as directed on package. Add rice vinegar and set aside to cool. You can even stick it in the freezer for about 10 minutes.
- Drain tuna and mix with 1/2 of mayo mixture.
- In a 1 cup measuring cup, begin to layer your Sushi Stack.
- Sprinkle bottom of cup with sesame seeds.
- Layer half the cucumber, carrots, and avocado slices.
- Add half of the tuna mixture and press down with a spatula or spoon.
- Add rice and press down.
- Put a plate upside down over cup and invert. Tap to loosen the content and lift cup straight up.
- Finish by drizzling with the spicy mayo.
