Spicy Tuna

Sushi Stack

Sushi made simple! Fun to make, exploding with flavor, and guaranteed to impress! Great for lunch or dinner.

Ingredients

  • 1/2 cup Jasmine Rice (I use the vacuum packed rice found in grocery store), cooked
  • 1 Tbsp Rice Vinegar
  • 1/2 Cucumber (I use the artisan), cubed
  • 1/2 Avocado, thinly sliced
  • 1/2 Carrot, finely grated
  • 1 5oz can Albacore Tuna, in water
  • 1/2 cup Mayonnaise
  • 1 1/2 tsp Sriracha Sauce
  • 1 tsp Sugar
  • White & Black Sesame Seeds

Let's Get Started

  • Mix together mayo, sriracha, and sugar. Set aside.
  • Prepare rice, as directed on package. Add rice vinegar and set aside to cool. You can even stick it in the freezer for about 10 minutes.
  • Drain tuna and mix with 1/2 of mayo mixture.
  • In a 1 cup measuring cup, begin to layer your Sushi Stack.
  • Sprinkle bottom of cup with sesame seeds.
  • Layer half the cucumber, carrots, and avocado slices.
  • Add half of the tuna mixture and press down with a spatula or spoon.
  • Add rice and press down.
  • Put a plate upside down over cup and invert. Tap to loosen the content and lift cup straight up.
  • Finish by drizzling with the spicy mayo.
